With days getting noticeably shorter and the morning air crispier, I've been craving all things warm and spicy, and this homemade chai tea is all I want to drink lately. About a year ago, I discovered this recipe in one of my favourite books 'A Year Between Friends' by Maria and Stephanie and it's perfect, if there is such thing, anyway:)  Fancy making a cuppa too?

Here is the recipe that will make 2 cups full of chai tea (because, don't kid yourself, you'll want a top up):

- 1 3/4 cups (420 ml) water - 3 whole star anise pods - 2 cinnamon sticks - 10 whole cloves - 10 cardamom pods - 3 black peppercorns  - 1-inch (2.5-cm) knob of fresh ginger - 1 cup milk (of your choice) - 1 teaspoon raw cocoa powder - 2 black or rooibos teabags - 2 or 3 teaspoons honey (for sweetening)

Pour the water into a small saucepan. Add the anise, cinnamon, cloves, cardamom, peppercorns and ginger. Bring the ingredients to a boil over high heat and then reduce the heat to medium and simmer for 10 minutes. Pour in the milk and add the cacao powder. Reduce the heat to low and whisk until the cacao is completely blended. Leave the milk mixture on low heat, barely simmering, for 5 minutes, stirring about once every minute. Turn off the heat. Drop a teabag into two mugs. Pour the hot milk mixture into the mugs through a fine strainer, reserving the cinnamon sticks and placing them one in each mug. Stir. Cover the mugs and let the tea steep for 5 minutes, then remove the teabags. Sweeten it with honey to your liking and use the cinnamon stick to stir. Ta-dah!
