Happy cake day, everyone!

The other day Balazs and I were watching Seinfeld reruns and it the episode when Elaine was told by her boss, Mr. Peterman that she couldn't join him on a work trip to Africa because she failed her urine test. Yup, they found drugs in her system:) Remember? To cut the story short, the high levels of opium found in her test was caused by her favourite poppy seeds muffin.

Anyway, ever since that episode I found myself craving poppy seed muffins, so last Wednesday I made those orange flavored ones above and I think Elaine would dig them too:)  Btw: they are totally butter-less, 99% sugar-free, fluffy, light and deliciously guilt free. Yay!

Orange Poppy Seed Muffins
(Recipe inspired and adapted from Lemon poppy seed muffins by Food52 . Serves 6-8)

- 3/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 4.2 oz (125 ml) applesauce
- dash of salt
- 1/3 cup maple syrup
- 2 eggs
- 4 ounces natural yogurt
-  2-3 tablespoons poppy seeds (depending how much you like poppy seed)
- 2 tablespoons grated orange zest
- 3 tablespoons freshly squeezed orange juice
- 1 teaspoon vanilla extract

Glaze:
- 1 teaspoon brown sugar
- 3 tablespoons freshly squeezed orange juice
- 2 tablespoons maple syrup

Heat oven to 350 degrees. Sift the flour, baking powder, baking soda, and a dash of salt into a bowl.

In a separate bowl mix together the applesauce, maple syrup, eggs, yogurt, orange zest, orange juice, poppy seeds and the vanilla extract.

Combine the wet mix with the dry mix till you achive a smooth batter. Pour the batter into a lined muffin pan and bake for about 20 minutes.

Make the glaze by simmering the orange juice, brown sugar and maple syrup until the sugar has dissolved.

When the muffins come out of the oven, spoon a generous amount of the glaze over the top of each hot muffin. Next let them all cool off and enjoy! Ta-dah!
