Remember when two weeks ago I told you about the best cookies EVER? Well, I just made the best healthy cookies EVER! Yup, they are both incredible, just the other one is made with tons of butter and sugar, while this one above is made with oats, brown rice flour and coconut oil. Yup, they are totally vegan and incredibly indulging. They have the most amazing texture and they are my favourite cookies right now!

The Best Oat Chocolate Cookies
(Recipe by Deliciously Ella. Makes about 20 x 20 grams vegan cookies)

Ingredients:
- 190 grams  ground oats
- 50 grams brown rice flour (or plain flour)
- 90 grams chocolate chips
- 60 ml. almond milk
- 60 grams coconut sugar
- 25 ml. maple syrup
- 45 grams coconut oil
- 2 grams baking powder
- pinch of salt

Set the oven to 180°C. Blitz the oats into a flour, then mix it with the rice flour, coconut sugar, baking powder and salt. Gently melt the coconut oil (don’t let it boil) and pour it into the dry mix with the maple syrup and almond milk. Stir well, using your hands to get a cookie-style sticky mix, then mix in the chocolate chips. Roll into small balls, flatten onto a lined baking tray. Bake for about 10 mins. They’ll still be pretty soft when you take them out of the oven and they’ll set in the time it took to bake. Ta-dah!
