Yay to cake day! Lately, I've been craving prunes and despite their bad rap, I truly love them. Actually, they are my favourite dried fruits for quick snack on the go. So, I think you might love them too in this cake that I've just baked for you.

Ah, as soon as it came out of the oven, the flat smelled special and the day felt uplifted. The spices make it taste warm and festive, while the applesauce keeps it moist and healthy. What else would you ever want, right?

Prune Cake
(Recipe originally by The Pioneer Woman via OliePants and slightly adapted by me)

Ingredients:
- 1 cup prunes
- 1 1/2 cups all-purpose flour
- 1 pinch of salt
- 1 teaspoon baking soda
- 1 teaspoon ground allspice
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 cup (230 ml) apple sauce
- 1 cup maple syrup
- 1 teaspoon vanilla extract
- 3 eggs
- 1 cup buttermilk

Syrup:
- 3 tablespoons maple syrup
- prune water*
- a dash of vanilla extract

Preheat oven to 300 degrees F. Grease a 9 by 13-inch baking pan. Place the prunes in a small saucepan. Cover them with water. Bring to low boil and cook until soft and mashable, about 8 minutes. Save the water in a separate little bowl* and mash the prunes into small pieces. Set aside.

Mix together the flour, salt, baking soda, allspice, cinnamon, nutmeg in a large bowl. In another bowl, whisk together the apple sauce, sugar, and vanilla. Beat in the eggs and sugar, one at a time, until fully incorporated.

Combine the flour mixture with the egg mixture. Add and stir in the buttermilk until just combined - do not over stir. The batter may be lumpy at this point. Stir in the prunes.

Pour the batter into the prepared pan and bake for 40 to 60 minutes, or until a toothpick inserted in the center comes up clean.

Meanwhile about 5-7 minutes before the cake is done, combine all the topping ingredients in a small saucepan and bring to a slow boil over medium-high heat. Continue boiling for about 5 minutes.

Remove the cake from the oven and pour the syrup evenly over the cake. Serve warm or cool. Ta-dah!
